Prime Standing Rib Roast is a must for our holiday dinners. We tend to cook the traditional ham and turkey for Thanksgiving, but for Christmas my family always request the prime rib.

Step 1 – The first step is to allow the prime rib to sit at room temperature for 1 hour before you cook it. It needs to come to room temperature.

Step 2 – Go ahead and preheat the oven temperature to 500 degrees. Get out a roasting pan and place the prime rib on the rack inside the pan. Make sure to put this with the bones down.

Step 3 – Use a small bowl and mix together the olive oil with the seasonings. Rub this all over the outside of the prime rib.

Step 4 – Put in the oven at 500 degrees for 15 minutes.

  • Step 5 – After cooking at high heat, you need to reduce the temperature to 325 degrees. Then cook the roast for 10 to 15 minutes per pound depending on your preference of how done you prefer the meat.
  • Step 6 – You will need to use a meat thermometer to make sure the beef is cooked to the temperature that you prefer.
  • Step 7 – Once cooked, take the prime rib from the oven or open the oven door. Put foil over it and allow the roast to rest for 15 to 30 minutes before slicing.

  • Meat Thermometer – The number one tip is to use a meat thermometer. You want to make sure that your meat is cooked correctly so you don’t ruin an expensive cut of meat.
  • Cooking Time – Make sure you that you don’t overcook the meat. Cooking times could vary so be mindful of that when cooking this roast. Remember that you roast will continue to cook after you remove it from the oven.
  • Rest Prime Rib – It is also important to let you prime rib rest 20 minutes after cooking it. This allows the juices to properly soak into the meat so that you meat is tender and juicy. If you do cut the meat to early, the juices will come out to early which will make you prime rib tough to chew.
  • Make Gravy – Use the juices from the prime rib and make a au jus gravy.
  • Serving – If we are serving to our family and friends, I like to carving just enough prime rib for the guest I am serving with a sharp knife. This keeps the prime rib warm and helps retain the juices.

Cooking Temperatures:

Here are the approximate time and temperatures needed based on how you like your prime rib cooked. Make sure you thermometer registers the temperature you desired.

  • Rare – Cook until the beef reaches an internal temperature of 120 degrees F (approximately 10-12 minutes per pound).
  • Medium-Rare Prime Rib – Cook until the beef reaches an internal temperature of 130 degrees (approximately 13-14 minutes per pound).
  • for Medium – Cook until the beef reaches an internal temperature of 140 degrees (approximately 14-15 minutes per pound).
  • Medium Well – Cook until the beef reaches an internal temperature of 150 degrees (approximately 15-16 minutes per pound).

Keep this in mind! The beef will continue to cook after it is removed from the oven. My rule of thumb, is that once the meat thermometer reads about 5-10 degrees less than the desired temperature, I will remove it from the oven.

I like to use adigital meat thermometer. They are so much easier to read. You can get them inexpensively and they are nice to have in the kitchen when you cook meat. It also helps you to cook the perfect prime rib.

How Many People does Prime Rib Serve?

A full Prime Rib is about 7 ribs. We usually plan on about 2 people per rib, so this size of prime rib will feed about 14-16 people.

That is still a lot of meat per person. So depending on your size and if that number includes kids, you could probably say about 3 people per rib.

Prime Rib is even great leftover if you and your guest do not eat it all. My family loves leftover prime rib.
