- 1Tbsp. salt (for drawing water out of eggplant)
- 2Tbsp. olive oil (for brushing eggplant before roasting)
- 2tsp. italian seasoning (dried, for sprinkling on eggplant before roasting)
- 10basil leaves (large, cut in chiffonade strips, optional)
- 1/3cup freshly grated Parmesan
- 1/3cup mozzarella (finely grated low-fat, blend)
- hot red pepper flakes (for sprinkling finished pizza, optional)
- 3tsp. virgin olive oil (extra-)
- 3large garlic cloves (very finely chopped)
- 14.5oz. petite diced tomatoes (good quality, with liquid, or use 2 cups peeled and diced fresh tomatoes)
- 1/2tsp. italian seasoning (dried, blend)
- 1/4tsp. dried oregano (use Greek or Turkish oregano)

I liked it, but wasn't as good as an eggplant parmesan or a pizza.

It turned delicious and healthy as I like it to be. You can add other types of cheese, in case if don’t have mozzarella. For eggplant instead of paper towel method, I put them into the water and added salt there and let thin sit for 15-20 min. Also, if diced tomatoes are not enough for you, you can add tomato Italian sauce for better taste. That’s about it, great recipe, easy to follow. Thank you.

the sauce was not as meaty and delicious as it looks and the eggplant was too thick. weird texture I guess

i added sausage to the tomatoes sauce, other than that followed the recipe exactly.it was very good, even my husband who said he didnt want to try it, liked it.

Fantastic grilled the dish too hot to crank up the oven. I did not have salad so I grilled some bok choy. And had some hummus great combination.. I used a copper grill mat

Great. Though at the last! We found we didn't have the eggplant we thought we had. So improvised with sliced kumera and that worked out fine,

Delicious! We added panko bread crumbs on top of some of them before we broiled and it made it even better! We would have used italian bread crumbs if we had them.
